Known for serving for example black sausage made from reindeer blood, Restaurant Kitchen & Bar Dabbal of the Lapland Hotels Tampere was granted the Chaîne des Rôtisseurs shield on Saturday 27.10. 2018 as an acknowledgement of the high quality of food and service.
The shield was presented by the Bailli Délégué de la Finlande of the Chaîne des Rôtisseurs Johanna Hornborg-Ojala and the Bailli de Tampère Mikko Reinikka. The shield was handed over to the representatives of the Restaurant Kitchen & Bar Dabbal Maître Hôtelier Janne Mönkkönen, Maître Rôtisseur Janne Kostamo and Maître Restaurateur Antti Vielma.
– Dabbal is a welcomed addition to the high-quality shield restaurants of Tampere. It has a clear and unique business idea, which relies firmly on the ingredients of the Northern Finland. The portions show fearless creativity and a modern, unique and recognizable handprint – uniqueness all the way to the plates and utensils, says Mikko Reinikka.
– Nearly all of our employees have a personal relationship to Lapland. This shows as a friendly, personal and professional service, tells the restaurant manager Antti Vielma.
La Confrérie de la Chaîne des Rôtisseurs is the world’s biggest and oldest gastronomic society, devoted to develop the food, drink and restaurant culture together with top professionals and active enthusiasts.
The Rôtisseurs shield is a token of an exceptional service and selection of a restaurant, which stands out from the other businesses in the region. The quality and the service need to remain on a high level continuously and it is monitored by the regional Bailli council and the shield restaurants themselves. Any shield restaurant needs to have at least two of the esteemed professional members of the Chaîne des Rôtisseurs working in the restaurant.
