Smoked herring bouillabaisse for 2 persons:
👉For the stock:
Water 1L
Roasted fish bones, shrimp shells and left over cuts 500g
Smoked herring x5
Turmeric and Tomato sofrito 1cup
Chopped onion x1
Chopped celery stems x2
Chopped fennel x1
Chopped carrots x2
Garlic cloves x2
Give your veggies a rough chop and combine your mirepoix in the pot with your roasted bones and sofrito.
Cook for 45min approx.
👉For the soup:
Add in your choice of fish
Pike fillet x2
Mussels x8
Shrimp x8
Thinly sliced potatoes x4
Small dice of the same veggies we used for our stock and add those in the soup!
Onion x1
Fennel x1
Celery stem x1
Carrots x2
Soft boil until your potatoes are cooked! 20 to 30min approx.
👉For your Croutons:
Olive oil to taste.
Garlic salt and pepper
Mix in a bowl and coat the croutons well with the oil and spices.
Lay them down on a tray with oven paper to bake evenly until golden brown!
Strain your stock, add your sliced potatoes, diced vegetables and your seafood.
Soft boil for another 15 to 20 min or until your potatoes are cooked through.
And its ready!
Add a few drops of fresh squeezed lemon juice, cover your soup in croutons and serve with a garlic béarnaise on a toast.
Garnish with parsley or chives and enjoy!

An image that perfectly captures the type of weather we’ve been experiencing! It’s been warm enough for the lake’s ice to start melting, but then it turned cold again, leaving a fresh layer of snow on the parts that are still frozen! This return of colder weather after signs of spring is called “takatalvi” in Finland and is quite expected to happen each year 🥶
